Souped-Up Frozen Lasagna: A Fast 30-Minute Dinner for One

It’s Friday night and you want a special meal—but it’s the end of the month, rent is due, your meal allowance has run out (or you just don't want to order the usual takeout). What to do? Don't settle for cereal or instant noodles. It’s time for that lasagna you bought during your big monthly grocery run to shine.

Equipment
Microwave, skillet for the frozen vegetables.

Ingredients

1 frozen lasagna
1 container of leftover rice
1 handful of frozen vegetables (broccoli, cauliflower, etc.)
1 pinch of salt and seasoning of your choice for the vegetables

Preparation


Step 1
Place the lasagna in the microwave. Frozen lasagnas usually take 10 to 15 minutes to cook, depending on the brand and wattage.

Step 2
While the lasagna cooks, thaw and sauté the vegetables in the skillet. If you don't want to dirty a pan, wait until the lasagna is done and use the microwave. Another option is to toss the vegetables into the air fryer—pick your battles.

Step 3
If you’ve chosen to prepare everything in the microwave, defrost the vegetables now; the lasagna won’t get cold in the 3 minutes this takes.

Step 4
Reheat yesterday's rice in the microwave as well—you can plate your portion directly and pop it in.

Step 5
Cut the lasagna in half and serve one portion alongside the vegetables and rice. If you are dining solo, store the remaining half in the refrigerator for the next day.

Note: Never refreeze thawed lasagna. The remaining portion should be consumed within 24 hours.
